Ingredient Notes & Substitutions
Cooking spray: Avocado oil spray is my favorite. Olive oil spray, butter spray, or any cooking spray works. The pan-coating is what prevents sticking and makes cleanup easy.
Eggs: 2 large eggs. Adjust up or down based on appetite. 3 eggs makes a heartier portion. 1 egg with 2 whites is a lighter higher-protein option.
Salt and pepper: To taste. A pinch of seasoning salt like Lawry's adds extra depth.
Add-ins: Whatever you have. Shredded cheese, crumbled cooked bacon, diced ham, sauteed mushrooms, chopped spinach, cherry tomatoes, sliced scallions, fresh herbs. Pre-cooked is key, raw add-ins will not cook in 90 seconds.
Toppings: Sliced avocado, salsa, hot sauce, fresh cilantro, Greek yogurt, sriracha, everything bagel seasoning, a squeeze of lime. Add these AFTER microwaving so they stay fresh.
How to Store, Reheat & Freeze
These are designed to be made fresh and eaten immediately. The 2-minute total time means there is really no reason to make ahead. If you do have leftovers, store in an airtight container in the fridge for up to 24 hours. Reheat in the microwave for 30 seconds. The texture is best fresh though.
Freezing is not recommended. Cooked eggs do not freeze well, the texture turns rubbery and watery.

This is single-serve breakfast that pairs perfectly with whatever fast morning food you have. Fresh fruit (berries, banana, orange slices), a slice of toast or English muffin, a yogurt cup, or even just a glass of cold milk all round it out.
