Viral Chicken Pot Pie
The easiest chicken pot pie you’ll ever make! Rotisserie chicken, creamy soup, frozen vegetables and cheddar cheese come together under a buttery Cheddar Bay Biscuit topping for the ultimate cozy dinner.

Doing chicken pot pie my way! This easy chicken pot pie skips the homemade crust and starts with a few simple shortcuts: rotisserie chicken, canned cream soup, frozen vegetables and a big handful of cheddar cheese. Then it gets topped with Cheddar Bay Biscuits and brushed with garlic herb butter straight out of the oven. It’s cozy, creamy, cheesy and SO easy.
📝 Ingredients
- 1 rotisserie chicken, off the bone and shredded
- 2 cans cream of chicken soup
- 1 12-ounce bag frozen mixed vegetables
- 1 teaspoon seasoned salt
- 1 teaspoon garlic powder
- Black pepper, to taste
- 1 big handful shredded cheddar cheese
- 1 box Red Lobster Cheddar Bay Biscuit Mix
- 1/4 cup butter, melted
- Butter or cooking spray, for the baking dish
- Optional: Substitute one can of cream of chicken with cream of mushroom or cream of celery.

Preheat oven to 400°F.

Butter or spray the bottom of a 9x13-inch or 3.8-quart oven-safe baking dish.

In a large bowl, combine the shredded chicken, cream soups, frozen vegetables, seasoned salt, garlic powder, pepper and cheddar cheese. Mix until well combined.

Pour the chicken mixture into the prepared baking dish and spread evenly.

Prepare the Cheddar Bay Biscuit Mix according to the package directions, but save the garlic herb seasoning packet for later.

Scoop the biscuit mixture over the top of the chicken mixture and gently spread it out just enough to cover the top.

Bake for 20–25 minutes if using a 9x13-inch dish, or about 30 minutes if using a 3.8-quart dish. Keep an eye on the biscuits toward the end. If they're getting too brown, loosely cover the dish with foil for the last 5 minutes.

When the pot pie comes out of the oven, mix the melted butter with the garlic herb seasoning packet. Brush the garlic butter generously over the biscuits.
